Tex-Mex Baked Beans
- Preheat oven to 350 degrees F. In a large skillet cook bacon as directed. Set aside 2 tablespoons of bacon grease.
- Sauté in skillet, diced red onions, red bell peppers, jalapeños, minced garlic, and bacon grease. Sauté for 4 minutes or until vegetables are tender.
- In a casserole dish stir all ingredients together until mixed completely.
- Bake in preheated oven for 45 minutes.
- Remove from oven and serve with main dish.

Ingredients
- 8 slices Bacon Cooked and cut into 1⁄2” pieces
- 2 tablespoons Bacon Grease
- 4 (15oz) Cans of Pinto Beans rinse and drained
- 2 (15oz) Cans of Kidney Beans rinse and drained
- 1 small Red Onion diced
- 1 small Red Bell Pepper diced
- 1 Jalapeño seeded and diced
- 1 & 1/2 cup BBQ Sauce
- 1/2 cup Ketchup
- 2 tablespoons Spicy Brown Mustard
- 2 tablespoons Minced Garlic
- 1 teaspoon Salt
- 1 teaspoon Black Pepper garnish (optional)
- Cilantro garnish (optional)
Instructions
