Winner, winner, chicken dinner! This Easy Chicken Stuffing Casserole is a complete chicken dinner with all the fixings in one pot. It can satisfy your roast chicken cravings in 45 minutes flat.
How, you ask? By starting with handy ready-made ingredients like frozen mixed veggies, stuffing mix, canned chicken broth, and chicken gravy from a jar. Even the chicken is pre-cooked and pre-chopped (which makes this dish a great way to use up leftover chicken). All you have to do is combine everything, layer it in a casserole dish, and bake.
Half an hour later, you’ve got a hot, bubbling casserole with tender chicken and veggies swimming in rich gravy, all covered with a golden-brown layer of stuffing. Which means a complete chicken dinner is now a weeknight meal. You’re welcome.
Recipe Notes:
- Shredded rotisserie chicken is perfect for this recipe! You get about 3 cups of chicken off of a standard store bought rotisserie chicken.
- Raw chicken may be used, however the bake time will need to be increased to about 45-55 minutes. Make sure that the internal temperature of the chicken reaches 165℉. With the longer cooking time, I would cover the dish and then remove the foil in the last 15 minutes of cooking. The chicken will also release extra juice – I would cut down on the chicken broth in the filling to about ¼ cup.
- You can use any flavor of stuffing, I used Stove Top’s “Savory Herbs”
- Double the stuffing portion of the ingredients for an extra thick stuffing layer.
- Leftovers can be covered and stored in the fridge for about three days. You can freeze this casserole for up to 3 months and thaw in the fridge before reheating.
- You can use canned, made from a packet, or made-from-scratch gravy instead of jarred gravy.
- This recipe is great for using up Thanksgiving leftovers! Use turkey in place of the chicken and leftover stuffing.
Easy Chicken Stuffing Casserole
- Preheat the oven to 375℉ and grease a 9×13” baking dish.
- Whisk together the gravy, soup, chicken broth, sour cream, onion powder, garlic powder, and black pepper in a large mixing bowl.
- Fold in the chicken and mixed vegetables to the gravy mixture making sure the chicken and vegetables are completely coated.
- Pour the chicken and gravy mixture into the 9×13” baking dish.
- Stir the chicken broth, 4 tablespoons of melted butter and stuffing mix together in a medium mixing bowl just until moistened.
- Use your hands to crumble the stuffing over the top of the chicken and gravy mixture into an even layer.
- Bake the dish for 30-35 minutes or until the gravy is bubbly and the stuffing is golden brown.

- 12 ounce jar chicken gravy
- 10.5 ounce can condensed cream of mushroom soup
- ½ cup chicken broth
- ½ cup sour cream
- ½ tablespoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 3 cups chicken breast cooked and chopped into bite size pieces
- 16 ounces frozen mixed vegetables
For the stuffing:
- 4 tablespoons unsalted butter
- 1 cup chicken broth
- 6 ounce package stuffing mix
- *Fresh parsley for garnish

- Preheat the oven to 375℉ and grease a 9×13” baking dish.

Very good. Tasted like Chicken Pot Pie with Stuffing mix. I couldn’t find where you added the 4 T. butter, so I melted it and put it with stuffing mix and chicken broth. That worked!
