Classic Rice Krispie Treats, with a holiday twist.
Rice Krispie Treats are a classic cookie favorite, and it’s easy to see why. Kids love them, and parents love how easy they are to make. Just melt marshmallows with a little butter, stir in the Rice Krispies, and spread them in a pan – what could be simpler?
But at Christmas time, these super-easy cookies just don’t feel fancy enough. It’s a special time of year, so you feel like you should be making special holiday cookies. Like gingerbread men, for instance, which look pretty and have a spicy, Christmas-time taste.
But what if you could do both?
All you need are gingerbread marshmallows and some white almond bark to turn these everyday treats into holiday-flavored Gingerbread Rice Krispie Treats. They’re just as easy to make as the regular kind, but that ginger spice taste makes them smell and feel Christmasy. And drizzling the melted white chocolate on top gives them a festive look.
If you can get your hands on some little gingerbread-man decorations, you can add one of these to each treat to dress them up and make them look even more gingerbready. But either way, kids and grownups will gobble them up.
Gingerbread Rice Krispie Treats
INGREDIENTS:
1-10 oz bag gingerbread marshmallows*
6 cups Rice Krispie cereal
6 Tablespoons butter
2oz white almond bark
Gingerbread candies, optional
*NOTE: if gingerbread marshmallows are not available to you, use regular marshmallows and add 1 teaspoon molasses, 1/2 teaspoon nutmeg, 1/2 teaspoon ginger and 1 teaspoon cinnamon to regular marshmallows AFTER melting.
DIRECTIONS:
1. Grease or line a 9×9″ square baking pan. Place your marshmallows and butter in a large, microwave-safe bowl.
2. Heat for 30 seconds, then stir, and reheat as necessary. Add in the Rice Krispies and stir well, until coated. Fold the mixture out into the baking pan.
3. Press down to make them even. I like to use parchment paper or wax paper for this to prevent sticking to hands.Refrigerate 1 hour to set.
4. Once the Rice Krispies have set, heat the almond bark in a small microwave-safe bowl for 30 seconds, then stir, and reheat if necessary. Drizzle the white almond bark over the squares. Add any sprinkles or decorations while the almond bark is still wet. Once the almond bark is set, about 5 minutes, cut into squares and serve.
