Too many Thanksgiving leftovers? I’ve got you covered.
For a lot of us, Thanksgiving was a lot smaller than usual this year. To stay safe, we had no one but the immediate family around the table. The result: a whole ton of leftover turkey (and a few other Thanksgiving leftovers) in the fridge.
Leftover Thanksgiving Food Lunchbox Ideas
The best way to use up all that turkey is to eat it for lunch. Rather than just serve up a rerun of Thanksgiving dinner, I like to turn it into new and interesting lunch box meals. For example (see individual recipes below):
- Chop it up and mix it with some scrambled eggs, cheese, and veggies, and bake it in a muffin tin to make little mini frittatas.
- Chop it up with celery, cranberries, and a creamy dressing to make a turkey salad that’s great in a cup of butter lettuce.
- Slice it and serve it on rolls with provolone and some leftover cranberry sauce.
- Slice it and layer it on crusty bread with some sliced cheddar and leftover green bean casserole, then fry it to make an original and tasty grilled cheese sandwich.
And if you’ve got any other leftover odds and ends, like sweet potatoes or cranberry sauce, you can just serve them on the side.
Lunchbox 1: Turkey and Red Pepper Egg Cups
- 1 cup chopped turkey
- 4 eggs
- ¼ cup chopped roasted red peppers
- 2 TBSP chopped onion
- ½ cup of cheese
- A splash of milk
- Salt and pepper to taste
- Spray a muffin tin and preheat the oven to 350 degree F. Divide the turkey into the 6 muffin tins.
- Top with the red peppers and onion.
- Scramble your eggs and divide them in the muffin tin. Top with cheddar cheese.
- Bake for 20-25 minutes, till set.
- Pack in your lunchbox and add in favorite sites. We packed our Turkey and Red Pepper Egg Cups with strawberries and pistachios.

- 2 cups chopped turkey
- ¼ cup celery
- ¼ cup cranberries
- ¼ cup greek yogurt
- 2 TBSP mayo
- ¼ tsp salt and pepper
- Butter lettuce cups
- Combine all ingredients into a medium bowl.
- Spoon into lettuce cups and enjoy! Sides packed with the Turkey Salad Lettuce Cups are baby carrots and crackers.

Lunchbox 4: Turkey and Green Bean Casserole Grilled Cheese
- Leftover Green Bean Casserole
- Turkey slices
- Sliced Cheddar Cheese
- A crusty bread like sourdough
- Butter the outside of your bread slices. Lay one slice of cheese down on the inside of one slice of bread. Then spread the green bean casserole. Next top it off with turkey and another slice of cheese.
- Close sandwich and cook on medium heat till the cheese is melted and the outside is golden. Sides packed with this lunchbox is whole Cranberry sauce and nuts and dark chocolate.

- Leftover Green Bean Casserole
- Turkey slices
- Sliced Cheddar Cheese
- A crusty bread like sourdough
